Olive oil & Mandarin Cake

Ingredients

  • 250 ml olive oil
  • 5 eggs
  • 1/2 kg self-rising flour
  • 2 cups sugar
  • 1 cup mandarin juice
  • Zest from 6 mandarins
  • A small amount of butter to grease the pan

Instructions

  1. Beat the olive oil and sugar in a mixer, while simultaneously sifting the flour.
  2. Add the eggs, zest, mandarin juice, and finally, the sifted flour.
  3. Place the mixture in a buttered baking dish or a buttered cake pan.
  4. Bake for 55 minutes at 180 °C.

Notes

You can dust the cooled cake with powdered sugar after removing it from the mold. You can decorate the dessert or serve it with mandarin preserves. A fragrant mandarin cake with only 6 ingredients. A simple recipe to enjoy with your family.
